Tiptree Trifle

Yield:
Serves 8-12
Ingredients:

1 whole pound cake

1 jar Tiptree Raspberry Seedless Preserves (12 oz)

Juice of 1 orange

Juice of 1 lemon

2-3 ripe peaches

½ pint fresh raspberries

1 packet vanilla pudding mix

Whipped cream (optional)

Directions:

Choose an attractive, deep, glass bowl 8"-9" diameter. Cut cake into ½” slices and lay out on a board to dry for 2-3 hours. Spread a generous layer of Tiptree Raspberry Seedless Preserves on half the slices and top with remaining slices. Arrange slices in bottom of bowl, cutting to size as necessary. Press into position. Sprinkle with orange juice, cover and set aside. Drop peaches into freshly boiled water for approximately 10-15 seconds. Remove, skin and slice. Spread the sliced peaches over the cake. Sprinkle with lemon juice. Scatter raspberries over the peaches. Prepare vanilla pudding mix according to instructions and pour over fruit and cake mixture. Refrigerate until set. If desired, decorate with whipped cream.

 

Trifle should be made the day before required so that the flavors combine, and will keep for 3 days in the refrigerator. Keep covered with plastic wrap. If you prefer, change the fruit combination according to the season.
