1-1 1/2 lbs fresh fish fillet (red snapper, scrod, monk fish or salmon)
1 onion, sliced into thin rings
1 sweet pepper, chopped
1 Tbsp Busha Browne's Spicy Tomato Love Apple Sauce
1 tsp thyme
1 tsp basil
1/2 tsp salt
2 Tbsp butter or olive oil
Saute onions in melted butter or oil. Cook lightly and add sweet peppers. Place fish over the bed of onion and pepper. Drizzle Busha Browne's Spicy Tomato Love Apple Sauce and sprinkle herbs over the fish.
Cover tightly and steam over low heat until fish can be flaked with a fork. Delicious served with rice and a crisp salad.
