Roulades of Sole

Ingredients:

- 12 fillets of sole

- 1 tuft of parsley

- 2 branches of sweet marjoram

- 4 branches of thyme

- 2 spoons of bread crumbs

- 12 slices of bacon

- 2 spoons of oil

- 20 g of butter

- spoons of Modenaceti white Balsamic

- salt and pepper

Directions:

1. Wash and dry the fillets of sole

2. Mince the flavours and mix them with the grated bread, salt and pepper and put this mixture in the centre of the fillet

3. Roll each fillet around itself and the wrap it around a slice of bacon, fix it with a toothpick

4. Warm oil and butter and brown roulades

5. When bacon is crisp, sprinkle them with vinegar, cover the casserole and cook for 5 minutes over a low fire

6. Take the roulades and keep them warm

7. Make the sauce denser and denser and drop it on the roulades
