2 whole pork tenderloins, cleaned
6 oz Busha Browne's Spicy Fruit Chutney
Planters Marinade (see recipe below)
5 Tbsp Planters Sauce
4 Tbsp Myers Rum
3 Tbsp pineapple juice
2 Tbsp Busha Browne's Pukka Sauce
1 Tbsp molasses or brown sugar
Combine all ingredients in mixing bowl and stir until blended well. Use as marinade for Plantation Pork Tenderloin.
Cut a slit in the tenderloin by inserting a boning knife into one end of the tenderloin and working it down towards the other end. The cut is inside the tenderloin, running from one end through the center to the other end of the meat. After the cut is made, use a finger to widen the opening, then fill the tenderloin with 3 oz Busha Browne's Spicy Fruit Chutney. When the tenderloin is full, marinade for 2-4 hours (or overnight) in Planters Marinade. Grill or roast until cooked through, 7-10 minutes each side, turning occasionally. Slice diagonally and serve.
