Avocado and Papaya Gazpacho

serve 6

1 cup firm, ripe papaya, finely chopped

1 cup firm, ripe avocado, finely chopped

1/3 cup sweet green pepper, finely chopped

2/3 cup firm, ripe tomatoes

1/4 cup sweet onion, finely chopped

3 cups best quality tomato juice

3 cups best quality pineapple juice

1/2 cup cilantro, finely chopped

1 tsp fresh lime or lemon juice

1 tsp Busha Browne's Pukka Hot Pepper Sauce

Salt and freshly ground pepper taste


Combine all the finely chopped ingredients in a glass bowl and chill for sereval hours. Serve icy cold in pre-chilled earthenware bowls garnished with a few freshly ground papaya seeds, a sprig of cilantro or young celery tops.
