The sinolea method doesn’t press, but pierces the olives so just the “flower of the oil” comes out through gravity to produce an intensely flavored and highly aromatic oil. Olives are hand-picked (not tree-shaken which bruises the fruit and affects the oil).
Columela sherry vinegars are aged in time-honored traditional “solera” method produces a deep, complex flavor. They are made in Jerez from Palomino grapes, which are used to make Spain’s finest sherries.
